When registering for a competition, can a field be added to collect the name of the team's coach (optional, just like allowing alternates to be added).

You can now choose to ask for the coach name (non-custom field) for leagues and competitions. You can also make it required or optional.

Bobby Ray: No worries. Easy enough to miss. I already see "Coach Name," "Coach Email," and "Coach Phone" in NOCA's custom fields, so you just have to add those to any particular competition reg. config. and you're all set!
